What is Kefir?

There are actually two kinds of kefir: water kefir and milk kefir.

Milk kefir is fermented milk that contains several species of lactic cultures. It was discovered hundreds of years ago by shepherds living in the Caucasus Mountains.

They found that when they carried milk in leather pouches, the milk would sometimes ferment, turning into a fizzy drink that made them feel good (actually, the word "kefir" comes from a Turkish word that means "feel good"). Drinking milk kefir is similar to drinking yogurt.

Milk kefir is made using fresh milk and kefir grains. These grains look like tiny cauliflower and are made up of casein and gelatinous colonies of micro-organisms. The casein and the micro-organisms grow together symbiotically and are unbelievably good for you.

Water Kefir

If you're not a big fan of yogurt, consider making and drinking water kefir instead.  Like milk kefir, water kefir is loaded with healthy organisms and fill your digestive tract with the healthy bacteria you need to fight off illnesses and disease.

1.  For Digestive Troubles

If you suffer from intestinal tract disorders or even an ulcer, drinking kefir on a daily basis can do amazing things for your gut. The micro-organisms in kefir provide balance and healing to your intestinal tract, easing flatulence and constipation.

How to Make Kefir

You will need either the milk kefir grains or the water kefir grains.  Both are available for sale from Amazon. 

To make milk kefir, fill a clean jar with milk and add the kefir grains.  Cover the jar with a coffee filter, held in place with a rubber band. 

Within about three days you will have milk kefir.  Strain out the kefir grains with a nylon strainer (a metal strainer will harm the kefir grains) and add the grains to another jar of fresh milk.

To make water kefir (my preferred type of kefir), fill a clean, half-gallon jar with water and add 1/4 cup of sugar.  Add the kefir grains, along with a couple of slices of organic apple, and again, cover it with a coffee filter held in place with a rubber band. 

If the apple isn't organic, peel the slices before adding them to your kefir.  Within 24 hours, you will have water kefir.   Using a nylon strainer, strain out the kefir grains and add them to a fresh jar of sugar water.
