Vegetable Nutrition

Vegetable nutrition is not something most people in the nine to five routine think about, especially if their meals consist mostly of fast food and processed meals. But, one of the benefits of becoming more self-sufficient is having a garden and growing your own nutritious vegetables and improving your health in the process.

Why Vegetables are so Crucial

basket of vegetables A crucial nutrition in vegetables is the carotenoid, a nutritive chemical that you get whenever you eat a fruit or vegetable. Depending on the type of vegetable, you can boost your immune system, protect yourself from heart disease and reduce your chances of cancer just by having five to nine servings of these wonderful veggies every day.

Fresh if Best, But...

Since you will likely be unable to grow fresh vegetables year round, a wise investment would be to buy dehydrated vegetables in bulk. Dehydrated vegetables have just as much nutrition as the frozen variety and have far more nutrients than the canned version you find at the store. Plus, dehydrated vegetables take up less room.

In the winter when less fresh vegetables are available, also consider taking a vitamin supplement to boost your health.

So Which Vegetables are Best?

Although a wide variety of vegetables is best, some vegetables have more benefits for you than others. Here are some of the vegetables to consider when buying in bulk and planning your garden.

Orange Vegetables

Orange vegetables such as sweet potatoes, orange carrots and squash have beta-carotenes that convert into Vitamin A, essential vegetable nutrition that helps to strengthen your teeth and bones and also helps to keep your mucous membranes healthy to help fight off infections. They can also help your eyesight.

Beta-carotenes also help fight free radicals to prevent cancer and aging.

Dark Green Vegetables

Broccoli, kale and other leafy green vegetables produce the vegetable nutrition lutein. Lutein helps ward off cancer and protects your eyes against macular degeneration and cataracts. Eating plenty of dark green vegetables also protect your skin from the harmful effects of sunlight. Bell peppers are also an excellent source of lutein.

Tomatoes

Roma, beefsteak and all the wonderful varieties in between, not only do tomatoes provide us with zing in our lives, but they also provide the wonderful vegetable nutrition lycopene. Lycopene helps men especially, protecting them from prostate cancer. They are also an excellent source of antioxidants to fight off cancer, and help provide good bone and skin health.
